Tian of King Prawn and Crab
INGREDIENTS
80 gms fresh crabmeat, picked over
120 gms diced avocado
120 gms diced peeled prawns
40 gms fish roe
10 gms finely diced celery
20 mls Japanese (kupi) mayonnaise
Lemon juice
A few sprigs chervil
S & P


SERVES: 2

SERVING SUGGESTION
Serve as an individual entree or place in the centre of the table to share.

METHOD
Place crab in a bowl, add mayonnaise, seasoning and celery. In a separate bowl add avocado and lemon juice. Dice prawns into half cm pieces. Place crab mix in the bottom of a fondant mould or ramekin then layer in the avocado. Add a layer of prawns. Place in the fridge for at least 1/2 hour to set. To serve: place tian upside down in the centre of a chilled plate. Lightly spread a fine line of fish roe around the outside of the tian at the base. Dot plate with chervil leaves and serve immediately.
